Many Varieties Of Potato

We may be wrong, but we suspect we grow a larger variety of potatoes than any other single farm in Kent – with a potato to suit every occasion, every recipe and every budget. This year’s varieties are as follows:

Organic Nicola
Our best-selling potato by far. A few years ago, Nicola would have been described as a continental potato. Oval shape, waxy flesh and a superb sweet, nutty taste. Many of our customers absolutely rave about them, and others tell us that their children refuse to eat any other potatoes. Ideal as a salad or boiling potato – and no need to peel them. And they make superb Franco-German potato dishes including gratin dauphinois, Kartoffelsalat and Bratkartoffeln.

Organic Lady Balfour
In many ways, the opposite of organic Nicola. Bright white flesh and a fluffy texture – they make a superb organic mash – with a delicate traditional flavour. Whereas Nicola taste sweet and nutty, Lady Balfour taste earthy. We also have a small quantity of Lady Balfour bakers, which really are organic food at its best!

Organic Romano
At last, we can also offer you an organic red. Romano is a general purpose potato which is broadly round in shape and possesses creamy-coloured flesh with a soft, dry texture. Can be boiled, mashed, baked and roasted.

Maris Peer
General-purpose potato with a hint of sweetness – almost indistinguishable from the better-known Maris Piper. Boil or mash, and like Piper, outstanding for chipping and potato wedges. A Michelin-starred chef with a restaurant not too far from Tenterden tells us that they also roast better than any other variety he can buy. So Maris Peer is the perfect potato for Christmas.

Wilja
General purpose white potato, hundreds of acres of which used to be grown on Romney Marsh. Waxy texture, a robust earthy flavour and a slightly rough skin. Much loved by local people and freely available until the supermarkets decided that their customers cared more for the appearance of food than its taste … At this point, farmers were asked to grow Estima.

Estima
Another general purpose potato, but one possessed of a smooth skin, giving it a bit more of a picture-book appearance. It’s probably fair to say that Estima has a slightly more delicate flavour than Wilja, and the larger tubers make an excellent and very popular baker.

King Edward
The ultra-traditional English potato. It has a white skin with pink colouration, and pale yellow flesh. The texture is floury, and the potatoes can be used for all purposes – boiling, mashing, chipping, roasting and baking. But like any floury potato, King Edwards will fall apart if you boil them too long.

Pink Fir Apple
Another classic of traditional English cuisine, Pink Fir Apple is an ancient variety which looks more like a Jerusalem artichoke than a potato. It has a delicate nutty taste and arouses a lot of interest whenever it is served. We supply these to many local restaurants and gastro-pubs, and indeed the variety seems to be undergoing some sort of renaissance at the moment.

Cherie Red
Another continental variety, Cherie Red is popular in France, particularly as a baby salad potato. The skin is a deep red colour when washed, and the flesh is white with a floury texture. The tubers are a flattened oval shape and boil well. We sell a lot of these to lovers of red potatoes.

Desiree
Quite simply the UK's favourite red potato. General purpose with a nutty taste, Desiree makes excellent mash.
